
DIY Autumn Coffee Syrups: 3 Easy Recipes to Spice Up Your Brew
There’s something about autumn that calls for cosy flavours and comforting rituals – and coffee is no exception. Whether you’re snuggled under a blanket or powering through your workday with a warm mug in hand, adding your own homemade syrup can turn an everyday brew into a seasonal treat.
Skip the supermarket syrups and try one of these simple, customisable recipes at home. They’re quick to make, easy to store, and far more flavourful than anything store-bought.

Spiced Maple Syrup
Warm, mellow, and perfect with filter coffee or oat milk lattes.
Ingredients
- 1 cup water
- ½ cup maple syrup
- ½ cup brown sugar
- 1 cinnamon stick
- ½ tsp ground nutmeg
- ½ tsp ground cloves
- 1 tsp vanilla extract
Method
Combine everything except the vanilla in a saucepan and simmer for 10–12 minutes, stirring occasionally. Remove from heat, stir in the vanilla, and allow to cool. Strain and store in a clean bottle or jar in the fridge for up to two weeks.
This syrup adds a lovely golden sweetness with a soft spice that complements both black coffee and creamy espresso drinks.
Pumpkin Pie Syrup
No need to queue at a coffee chain for your PSL fix – this one’s better (and cheaper).
Ingredients
- ¾ cup water
- ¾ cup brown sugar
- 2 tbsp pumpkin purée
- ½ tsp ground cinnamon
- ¼ tsp ground nutmeg
- ¼ tsp ground ginger
- ¼ tsp ground cloves
- 1 tsp vanilla extract
Method
Whisk all ingredients (except the vanilla) together in a small pot and simmer for 5–8 minutes until the sugar dissolves and the mixture thickens slightly. Stir in the vanilla, then strain through a fine sieve or muslin cloth. Store in the fridge and give it a shake before using.
Add 1–2 tablespoons to your coffee, top with steamed milk, and you’ve got your own homemade pumpkin spice latte.


Orange & Cardamom Syrup
A brighter twist for autumn – citrusy, slightly floral, and utterly delicious in espresso tonics or iced lattes.
Ingredients
- 1 cup water
- 1 cup caster sugar
- Zest of 1 orange
- 6 cardamom pods (lightly crushed)
Method
Combine all ingredients in a saucepan over medium heat. Stir until the sugar dissolves, then simmer for 10 minutes. Let it steep for another 15 minutes off the heat before straining. Store in the fridge for up to two weeks.
This one’s also lovely drizzled over porridge or pancakes. It’s fragrant, unexpected, and perfect if you prefer something less sweet.
